Rodent evidence in a commercial kitchen: the first hour

4 min readAll In Pest Solutions, Pahrump NV

A technician inspecting a commercial kitchen during a service call

Someone finds it during prep, twenty minutes before the doors open: droppings behind the dry storage shelf, a gnaw mark on a bag of flour, a smear along the baseboard. What the manager does in the next hour matters more than most people realize. Move too fast and you lose the information a technician needs. Clean it up the wrong way and you spread the problem instead of containing it.

Stop and look before you touch anything

The first move is not a mop. Walk the area, note what you're seeing, and resist the urge to start scrubbing. Droppings, gnaw marks, and grease smears along a wall tell a technician where the activity is coming from and how long it's been going on. Once that's wiped away, that information is gone. Give yourself five minutes to just look before you do anything else.

What to pull from service for the hour

  • Pull any open food, packaging, or ingredients in the immediate area and set them aside rather than using them.
  • Close off that section of the kitchen or storage room so staff aren't walking through it during prep.
  • Hold any utensils, cutting boards, or equipment that were sitting in the affected area.
  • If the evidence is near a prep line, shift that station's work to another part of the kitchen for the time being.

What to document before it's cleaned

  • Take photos of exactly what you found and where, before anything is touched or moved.
  • Note the time and date you found it, and whether anyone noticed anything the day before.
  • Write down what it looked like: droppings, gnaw marks, grease trails, or a nesting smell.
  • Note how far the evidence spreads, not just the first spot you saw.

What not to clean up dry

Don't sweep or vacuum droppings dry. Disturbing them that way sends dust into the air, and that's not something to handle on a guess. If you're not sure how to clean the area safely, get advice before you go in rather than deciding on the spot. The safer move is to leave the area alone, keep it closed off, and let the person treating the problem deal with cleanup as part of the visit.

Why the receiving door and dumpster pad are usually the source

In most commercial kitchens, the activity traces back to one of two spots: the receiving door or the dumpster pad out back. The receiving door gets propped open during deliveries, sits on an uneven threshold, or has a gap under it that's easy to miss when you're focused on getting product inside. The dumpster pad is doing exactly what it's built to do, which is hold trash, and that makes it a draw for rodents working the perimeter at night. Once they're established near either spot, the path inside is usually short: a gap under a door, a pipe chase, a loading dock seam. Checking those two areas first, before chasing the problem through every corner of the kitchen, saves time and usually points straight at the entry point.

Service outside trading hours

A kitchen doesn't need to shut down mid-service to get this handled. Inspection and treatment can be scheduled after close or before open, so the work happens while the kitchen is empty and the line isn't disrupted. That timing also makes it easier to check the areas that matter most, like behind the line, around the dumpster pad, and along the receiving door, without staff moving through the space. Our commercial pest control service is built around that kind of scheduling, and our rodent control service covers the inspection, the entry point work, and the follow-up visit that confirms it held.
